Peach Upside-Down Cake!





YUM YUM YUM!

I have to admit, I'm not a big fan of fruit cake - BUT I tried out this recipe and absolutely loved it! It's not too heavy and it makes a change from the same old Victoria sponge.  The great thing about it is that you can change the fruit on top, to any other canned fruit. I'm sure you could use fresh fruit however, there may be slight alterations to the recipe, experiment!

I got this recipe from a website (link below) and altered it only very slightly by adding sliced almonds instead of powdered ones as it added to the texture of the sponge.

Ingredients. TIP: Don't forget to line your tin or it will stick-not fun to clean up!

Waiting for the sugar and water to caramelize was a little tedious, so be patient! Pattern your fruit any way you'd like to create a cool effect once it is cooked. 


By the time you've made your batter, the peaches and caramel should be solid enough to not mix with the batter once you pour it, if not, leave it for about 5 minutes.


Voila! 

Ice-cream, custard or whipped cream - take your pick and indulge!

Oh yes it's ladies night!

...And the feelings right!

Sorry about yet another cheesy title, but you have to admit that Atomic Kitten never gets old!  

As May 1st marks the start of summer I have chosen to show you a trendy, evening/day, spring/summer outfit all in one! I wore this outfit to dinner with my girlfriends over the weekend (hence the title 'ladies night'), as we finally started to see signs of spring here in England - a few weeks too late considering we are officially into summer now, but still, adios winter!

Personally, I think this season's peplum trend is so cute especially as it fits pretty much all body shapes and is really flattering. I want more of these in my wardrobe, don't you?














I wore the trend with jeans because even with the sunshine, the air was still a bit fresh! But as those warm summer nights kick in, it would work just as well with a plain coloured skirt (more on that next time though!). 

The top makes the jeans less casual and brightens the faded denim. I paired this outfit with sky-high heels, which match the print of the top, instantly making this a fun dinner outfit, or you could dress it down with flats too. As the top is a statement on it's own, I wore a very simple necklace and simple purse with gold accents to compliment it.
